
Gluten Free Linguine with Shrimp, Zucchini and Chili Pepper

A first course that smells of the sea, enriched by the delicate flavor of courgettes and the strong character of chilli pepper. Ideal for surprising with simplicity and taste!
Ingredients for 4 people:
- 320 g of Linguine Vittoria La Classica
- 250 g of peeled and cleaned prawns
- 2 medium courgettes
- 1 clove of garlic
- 1 fresh chili pepper (or dried to taste)
- 50 ml dry white wine
- extra virgin olive oil, salt to taste
- chopped fresh parsley (optional)
Preparation:
- Prepare the courgettes : wash the courgettes, cut them into thin slices or julienne strips and set them aside.
- Cook the dressing : in a large pan, heat a drizzle of oil with the crushed garlic clove. Add the chili pepper cut into rounds and let it flavor for a minute. Add the courgettes and cook for 5-6 minutes until they become soft.
- Add the shrimp : Pour the shrimp into the pan, add the white wine and let it evaporate. Cook for another 3-4 minutes, until the shrimp change color. Season with salt.
- Cook the pasta : Meanwhile, boil the linguine in plenty of salted water and drain when al dente, reserving a cup of the cooking water.
- Toss and serve : Transfer the linguine to the pan with the sauce, adding a little of the cooking water to combine. Toss for a minute, sprinkle with chopped fresh parsley, and serve immediately.
