Gluten-free apple muffins

Ingredients for 6 muffins:
1 apple and a half
50g of rice flour (Caputo mill)
50g of oat flour (gluten-free certified)
60ml of vegetable drink
25g of EVO oil
40g of whole cane sugar
1 egg
½ bag of baking powder
1 teaspoon of cinnamon
Grated lemon peel
Dice 3 quarters of apple and cut the rest in thin slices to garnish at the end of the preparation. Whisk the egg with sugar, then again with oil, vegetable drink and grated lemon peel. Add flour, cinnamon, apple cubes and baking powder and mix it all before pouring it in muffin liners. Garnish the top with apple slices and bake in the oven at 180 degrees for 25-30 minutes (do the toothpick test).
